Cajamarca Region
This Micro lot is the best representation of what Cajamarca as a region can provide in terms of high quality coffee. Although not the biggest region per volume, Cajamarca is definitely among the best in producing top qualities in Peru. As diverse as only Peru can be, there is an enormous diversity in climates within Cajamarca which offers a big array of cup profiles, varieties and exciting coffees. Home to Cultivar’s biggest buying facility in Peru, the city of Jaén centralises almost all the operations regarding buying and selling coffee in the region. It’s the place to go when you are a producer and the place to be when you are a buyer.
Coronados & Santacruz family
The lot we bring you today is made up of coffees from 2 provinces in Cajamarca: Cutervo and Jaén. Both gather all the conditions to grow fantastic coffee: fertile soils, altitude that range from 1600 to 2000 masl, good cup varieties (mainly red and yellow Caturra, but also bourbon, Typica). The name of the lot is Coronados & Santa Cruz as a fun fact for 2 families that are dedicated to grow high quality coffees in separate areas in Cajamarca with a long relationship at Cultivar and at the top of their game when speaking of good qualities. So we wanted to showcase this as a mini competition between the two.
Processing
Both families harvest the cherries at their ripe moment of the harvest, then take the floaters out and depulp. After that they get the beans with their mucilage into closed bags and ferment for 24 to 48 hours under shadow. After that they wash with clean water and put it to dry for 5 to 10 days. The sweetness and the fruitiness of both families’ coffees combined gave a beautiful sweetness and the fruitiness of the coffee made a beautiful micro lot, with complexity and versatility.
